Euskalduna Bilbao opens the Euskalduna by Etxanobe Restaurant under the direction of Fernando Canales

Six years after his last experience at the Euskalduna Palace, Bilbao-born chef Fernando Canales returns home with a project that combines tradition and creativity: Restaurante Euskalduna by Etxanobe.

The restaurant, designed by the prestigious Patricia Urquiola, is located on the fifth floor of the Palace, offering excellent panoramic views, in the very same space that hosted the iconic Etxanobe back in 1999. It also features an exclusive terrace that can be enjoyed all year round.

This new project marks Canales’s return to the place where his most emblematic restaurant was born — a restaurant that earned one Michelin star and two Repsol Suns. The name Etxanobe refers to the chef’s maternal surname, a personal nod that connects memory and family identity with his culinary vision.

Canales’s cuisine combines respect for tradition with contemporary creativity, resulting in a unique experience that awakens the senses while maintaining the unmistakable hallmark of quality and honesty that defines his cooking.

Canales’s career has been recognized with numerous awards, including the Basque Gastronomy Award (2005), Best Restaurant in Spain (2006), Chef Millesime (2014), Nécora Award (2019), and Illustrious Citizen of Bilbao (2020). Today, with Euskalduna by Etxanobe, he returns to the Palace where his most iconic project was born — this time joined by Chef Iván Álvarez Iturbe, a seasoned professional who shares his sensitivity and philosophy of respect for the product and creative expression.

Opening and Reservations

Restaurante Euskalduna by Etxanobe officially opens its doors to the public today, Tuesday, October 14, following a closed trial period that ensured a gastronomic experience worthy of Euskalduna Bilbao’s high standards of quality.

Opening hours:

  • Monday to Thursday: 1:00 PM – 4:00 PM
  • Friday and Saturday: 1:00 PM – 3:30 PM / 7:30 PM – 10:30 PM
